Pausing doesn't delete anything. Your keywords, negatives, ads, and history all survive. What you 'lose' is momentum: smart-bidding strategies re-enter a learning period when you resume, so expect a few bumpy days, not a reset to zero.

For short breaks, better options than pausing: an ad schedule that stops serving on the days you can't answer, or a lowered budget that keeps a trickle of data flowing. Pause fully when nobody can respond to leads at all. Ads that generate ignored calls burn money and reputation.

'Paused' vs 'removed' matters: paused is reversible and keeps everything; removed is deletion. Never remove something you might want back. Pause it and let it sit.
